 Bread Machine Bread

Ingredients:

This is for a 1.5 lb. loaf and the ingredients go into the pan in this order -

1  1/3 cups water (110-115 degrees F or 43-46 degrees C) - additional if needed for correct dough texture- add slowly, as needed

3 extra large eggs (brought to room temperature)

3 Tbsp oil 

1 tsp. cider vinegar

3 Tbsp sugar (or honey)

1 1/2 tsp salt

1/2 cup acceptable dry milk substitute(i.e. Dari Free powder)

2 cups white rice flour

2/3 cups potato starch flour

1/3 cup soy flour

1/2 cup tapioca starch

1 Tbsp xanthan gum

4 1/2 tsp  quick rise yeast (or 3 packets of Fleischmann's quick rise yeast)

Instructions:

1. Place ingredients in machine, in order listed above. 

2. Select fast bake setting.  

3. Monitor batter after mix cycle to determine if additional water is needed. 

4. Allow bread to completely cool before slicing.
