 Chick Pea and Rice Bread

Source: Tina, GFCF Kids

Wet Ingredients:

3 large eggs(room temperature), lightly beaten

1 tsp cider vinegar

3 Tbsp olive oil

1 1/3 cup water

1/4 tsp gluten free maple flavoring extract (optional)

Dry Ingredients:

1 cup chick-pea flour or brown rice flour

1 cup white rice flour

1/2 cup tapioca starch

1/2 cup cornstarch

4 tsp xanthan gum

3 Tbsp brown sugar

1  1/2 tsp salt

1 Tbsp egg replacer  , optional

1/2 cup acceptable dry milk substitute(i.e. Dari Free)

2 1/4 tsp active dry yeast

Instructions:

1.  Combine wet ingredients and pour carefully into bread machine pan.

2. Measure dry ingredients, mix well. 

3. Add to bread machine pan.

4.  Carefully set pan in bread maker.

5.  Select normal white cycle and start machine.

6.  After mixing begins, help any unmixed ingredients into dough with rubber spatula.

7.  If needed, added additional rice flour to reach correct dough texture.

8.  Remove pan from the machine when bake cycle is complete.

9.  Invert pan and shake gently to remove bread. Cool upright on a rack before slicing.
