Fudge Brownies

3/4 cup cocoa

2 cup sugar

1/2 tsp baking soda

2 eggs

2/3 cup oil

1 tsp xanthum gum

1 1/2 cup gluten free flour mixture

1/2 C boiling water

2 tsp vanilla

Mix cocoa and baking soda together in a large bowl. Blend in the oil. Add the boiling water and mix well. Stir in the remaining ingredients. Pour into a greased 9 X 13 inch baking dish (optional - pour layer of chocolate chips over the top for double chocolate self iced brownies) Bake at 350 for 30 to 40 minutes.
