 Easy Mints

Source: Carol, GFCF Kids

Ingredients:

1/4 cup margarine

2 Tbsp water

1/4 tsp salt

1/2 tsp peppermint extract

3 1/2- 3 3/4 c. confectioners sugar

food coloring, as desired

Instructions:

1.  Combine butter and water, place over low heat until butter melts.

2.  Remove from heat; add salt and extract.

3.  Gradually sift in sugar, blending until desired consistency is reached.

4.  If colored candies are desired, divide candy in parts and tint various shades by working several drops of food coloring into each part.

5.  Knead until smooth.

6.  Mold into individual candies or form small rolls to slice. If rolls are refrigerated, allow to return to room temperature before slicing.

7.  Use candies without storing.

Yield 1 lb. mints.
