 Cinnamon Doughnut Drops

Source: GFCF Kids

Ingredients:

1  1/2 cup acceptable gluten free flour(i.e. Bette Hagman Mix)

1/3 cup sugar

1 1/2 tsp xanthan gum

2 tsp baking powder

1/2 tsp salt

1/4 tsp cinnamon

1/4 tsp nutmeg

1/2 cup acceptable milk substitute(i.e. Dari Free)

2 Tbsp oil

1/2 tsp vanilla

1 egg, slightly beaten

Topping:

1/2 cup sugar

1 tsp cinnamon

Instructions:

1.   Heat oil in a pan or deep fryer to 375 degrees.

2.  Combine dry ingredients in one bowl and the wet ingredients in another bowl.

3. Add wet to the dry and mix well.

4. Drop by teaspoonfuls into the oil and cook 1 to 1  1/2 minutes on each side or until golden brown drain on paper towel.

5.  Combine topping ingredients in a zip lock style bag, add a few donuts at a time and shake to coat.
