 Gluten Free Chocolate Cake

Source: Lisa Watson, modified from Hershey's Recipe Collection

Ingredients:

2 cups white sugar

1 3/4 cups gluten free flour mixture(i.e. Regular Bette Hagman flour mixture)

3/4 cup Cocoa

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

2 eggs

1 cup milk substitute

1/2 cup oil 

2 tsp vanilla

1 cup boiling water

Instructions:

1.   Preheat oven to 350 degrees F.

2.  Coat a 9x13 cake pan with oil, then dust with rice flour.

3.  Combine dry ingredients in large bowl.

4.  Add eggs, milk substitute, oil and vanilla. Beat on medium speed for 2 minutes.

5.  Stir in boiling water (batter will be thin). 

6.  Pour into pan, bake about 40 minutes.
