Chip Chick Source: Jane Becker, GFCF Kids 1 1/2 lbs boneless chicken 1/4 cup rice milk or other milk substitute 1 large egg 1/4 tsp. pepper 2- 6 oz. bags of potato chips, any flavor Preheat oven to 400; grease cookie sheet or line with parchment. Beat egg and
milk substitute together, add pepper. Cut chicken into fingers or bite size pieces. Soak chicken pieces in this mixture while
you prepare the chips.Make a small opening in one corner of bag of potato chips. Using a rolling pin, full soda can,
or other heavy object to crush chips. Make them as fine as possible. Repeat for second bag. Put crushed chips
in shallow baking dish. Dredge chicken pieces in chips, covering well. Put on cookie sheet. Bake 10 minutes at 400; turn
pieces and bake for around another 10 minutes. Pieces should be nice and brown. Serves 4. |
