Popped Rice

1 cup sweet brown rice

1 1/2 cups hot water

Combine and allow to stand for one hour.  Using a strainer, drain water from rice.  In a large skillet, add 2 Tbsp cooking oil and place on medium - high heat, heat oil before adding rice(be certain that the water has been thoroughly drained from the rice or the water will cause the oil to spatter and burn you).  Add rice and stir well. Cover and  gently shake until the kernels are mostly popped like popcorn and lightly browned.  Remove from heat, add margarine and salt, if desired.  ... when they are mostly popped and lightly brown remove from heat.
