Chocolate Pudding

4 large egg yolks

1/4 cup gluten free flour mixture

1 Tbsp corn starch

1 cup sugar

3 cups milk substitute

3 oz. chopped unsweetened chocolate

2 Tbsp margarine

1 1/2 tsp vanilla

Beat the yolks.

Mix flour, corn starch, and sugar. Whisk in milk and add chocolate. Stir over high heat until it boils, 6-10 minutes. Stir while boiling for 1 minute. Stir 1/2 cup hot pudding into yolks, then pour yolks into pan. Cook stirring 1 minute more. Add margarine and vanilla and stir until margarine is melted. Serve warm or put in individual serving dishes and cover with plastic wrap, chill 24 hours.
