 Carrot Cake

Ingredients:

2 cups grated carrots

1 cup raisins

1/2 cup honey

1 tsp cinnamon

1 tsp powdered ginger

1 tsp cinnamon

1/2 tsp cloves

2 Tbsp butter or margarine

1  1/2 cups apple juice concentrate

2 cups cornstarch

1 tsp baking soda

1 cup chopped walnuts

Instructions:

1.   Place carrots, honey, spices, butter and apple juice concentrate in heavy saucepan, bring to a boil and cook over low heat for ten minutes. 

2.  Allow to cool to lukewarm. 

3.  Preheat oven to 300 degrees F. 

4.  Mix together dry ingredients and stir into apple juice mixture.

5.  Pour into 2 small well-greased loaf pans [may use other sizes] and bake for 45 minutes in a well greased pan (or, line pan with parchment paper ) until it tests done.

 

 Cream Cheese Frosting

Ingredients:

8 ounces cream cheese or dairy free cream cheese

1 lb confectioner's sugar

1 tsp lemon extract

Instructions:

1.  Combine all ingredients, beating until smooth and creamy. 

2. Frost cake when cooled.
