Irish Potato Candy

Ingredients:

1 potato, mashed and cooked in margarine and milk substitute

1 tsp vanilla

coconut shredded, makes potato mixture look like candy

cinnamon, optional

Instructions:

1.  Add powdered sugar until the mixture gets to the consistency of dough that may be rolled. It will be very hard and heavy to mix.

2.  Roll into balls and roll into cinnamon.
