Fudgy Brownies

3/4 cup cocoa

2 cup sugar

1/2 tsp baking soda

2 eggs

2/3 cup oil, divided

1 1/3 cup gluten free flour mixture

1 tsp guar or xanthan gum

1/2 cup boiling water, measured precisely

1/4 tsp salt

1 tsp vanilla

Preheat oven to 350 degrees Farenheit.  In a mixing bowl, combine cocoa and baking soda.  Blend oil, add boiling water and stir until it thickens. Stir in sugar and eggs, mixing until smooth. Add flour, xanthan or guar gum, vanilla and salt, blending well.  Transfer into two 8 x 8 inch lightly greased baking pans.  Bake at for 35-40  minutes or until toothpick inserted into center comes out clean. Cool. Frost if desired.
