Banana Muffins

3 large bananas

3/4 cup white sugar

1 egg

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

11/2 cups rice flour

1/3 cup melted margarine or butter

Mash bananas. Add sugar and slightly beaten egg. Add the melted  butter/margarine.  Add the dry ingredients and bake in 375 degree Farienheit preheated oven for 20 minutes  for muffins.  Or, if you are making this as banana bread or cake, increase the cooking time to about 40 or 45 minutes. Check with toothpick to see if it comes out clean.
