 Grandpa cookies  - Mock Oatmeal Cookies

Source: Deborah Martin, Celiac Digest

 

Ingredients:

1 cup Shortening

1 Tbsp butter (or shortening)

2 cup brown sugar

2 eggs

1 tsp salt

2 cups gluten free flour

1 tsp baking soda

1 1/2 cup Puffed Millet

1 C gluten free chocolate chips

1/2 cup raisins or pecans (optional)

 

Instructions:

1.   Mix Shortening, sugar and eggs.

2.  Mix in remaining ingredients. The mixture will appear rather dry.

3.  Form into balls and drop onto cookie sheet.

4.  Bake at 375 degrees for 10 to 12 minutes.

 

Note: If the cookies spread more than you like, then add more millet, or raisins.
