Raspberry Lollipops- Corn Free

Ingredients:
3oz cane or beet sugar
3 Tbsp raspberry juice
thick toothpicks or lollipop sticks (available at www.KitchenKrafts.com)
 
Instructions:
1.   In a pot, bring the sugar and juice to a boil and let simmer, stirring constantly until the sugar crystals have dissolved. 
2.  With a spoon, form small circles of the mixture on a flat surface (or pour into lollipop molds (available through KitchenKrafts.com) and lay one toothpick on half of each circle.  3.  Let them harden and carefully pry off with a knife.
