Adverse reactions have been reported from some common chemical additives found in foods. These compounds, including histamines, salicylates, monosodium glutamate, BHT and BHA, and nitrites, are not proteins. They are responsible for food intolerances, not true allergies. Therefore, even an intolerant individual may be able to tolerate small quantities of these substances.

This may be particularly true with salicylate containing foods. Occuring in almost all foods, only those with high salicylate content are listed. As individual tolerance may vary, each person should adjust intake of these foods to their personal comfort.

Even with familiar brands, it is very important to read all labels carefully prior to buying or eating a food. Food manufacturers frequently change suppliers and ingredients. It is equally important to read labels when changing brands. Different brands of the same type of food may contain different ingredients.

Review the list of common foods and ingredients that may contain chemical allergens and help take the guess work out of label reading. Keep this list handy, you never know when you will need to read a food label.
