 Sponge Cake
 
Ingredients:
4 eggs ( room temperture)
3/4 cup sugar
1 tsp vanilla
1/2 tsp vinegar (generous)
3/4 cup cornflour (cornstarch)
1/4 cup custard powder (or tapioca starch if avoiding artificial colours and flavours)
1 tsp cream of tartar
1/2 tsp baking soda
 
Instructions:
1.   Preheat oven to 400 degrees F.  
2.  Grease, flour and line with baking paper two 8" round pans or 9" x 13" tin. 
3.  Sift dry ingredients except sugar 3 times.
4.  Separate eggs,  beat egg whites until stiff, gradually add sugar and beat until sugar dissolved. 
5.  Add vanilla and vinegar and then egg yolks.
6.  Gently fold in dry ingredients until just combined. 
7.  Bump to get rid of big air bubbles.
8.  Bake 15-20 mins or until pulls away from sides and skewer comes out clean.
