 Molasses Cookies
Source: Rachel C Vivace
 
Ingredients:
3/4 cup buckwheat flour
3/4 cup tapioca starch
3/4 cup potato starch
2 1/4 tsp guar gum
1 3/4 tsp baking powder (I used Featherlight)
1 tsp sea salt
Dash of cinnamon
 
Mix above ingredients and set aside.
3/4 cup molasses
1/2 cup Spectrum shortening
1 tsp baking soda
 
Instructions:
 
1.   Preheat oven to 350 degrees F. 
2.  Bring molasses to boiling.
3.  Add shortening; stir until melted and well blended.
4.  Add baking soda; stir until thick and foamy.
5.  Stir wet ingredients into dry.
6.  Chill dough for 1 hour.
7.  Roll into balls and press with drinking glass.
8.  Bake for 6 minutes.
