Mock Sour Cream

1/2 cup raw cashews
1/2 cup milk substitute
1/2 tsp Kosher salt
1/2 cup safflower oil (or other safe oil)
4 tsp apple cider vinegar or lemon juice
1/2 tsp garlic powder
1/2 tsp onion powder
 
Combine the cashews in a blender or food processor until ground very fine - add milk & salt, and blend on high for a couple of minute. Slowly drizzle in oil until mixture emulsifies. It’s not really the texture of sour cream - more like thick ranch dressing. Once it's done, add vinegar (or lemon juice) and spices. Great with added fresh ground pepper. It's delicious over baked potatoes, and with any kind of chips!
