 Pina Colada Muffins

Ingredients:
Sift together in bowl:
2/3 cup buckwheat flour
2/3 cup tapioca starch
2/3 cup potato starch
2 tsp guar gum
3 tsp baking powder
1 Tbsp Soy Quik or Darifree powder
 
Make a well in dry ingredients and put into it:
1 tsp coconut flavoring
2 Tbsp glycerin
1 cup pineapple juice (not from concentrate--Dole makes)
1/4 cup vegetable oil
1 egg
 
Instructions:
1.  Preheat oven to 400 degrees F.
2.  Mix above ingredients until lightly blended.
3.  Fold in 1/2 cup each: raw sunflower seeds and pulverized (almost powdered) unsweetened coconut. 
4.  Spoon into muffins tins, and bake for approximately 20 minutes or until toothpick inserted into center comes out clean.
