Butterscotch Pudding Bring 2 1/2 cups milk substitute to
boil, over medium heat, stirring constantly. Combine 1/3 cup cornstarch and 1/2 cup milk substitute in a cup and gradually
add to the milk in the double boiler. Cook, stirring occasionally, till thickened. Add 3/4 cup packed light brown sugar
or slightly more to taste, 1 Tbsp margarine, and 1/4 tsp salt to the milk mixture. Return to boiling and cook for 3 minutes.
Remove from heat; stir in 1 tsp vanilla extract. Pour into heat safe dishes, cool to room temperature, cover and
chill until ready to serve. |
