Tortilla Dessert Roll Ups
Source: Sandra Singer
Instructions:
1. Prepare Miss Roben's Tortillas
mix according to directions.
2. Using tapioca starch
to coat clean hands and the surface you are flattening the dough on, make each tortilla about 6-7
inches in diameter.
3. Place in dry frying pan over
medium heat and cook for about 30 seconds per side, so they won't get too crisp to roll.
4. After you made the tortillas, while they are still warm, cover top with peanut butter or any seed butter or honey.
5. Slice bananas into thin 1/8-1/4"
slices & cover on top of nut or seed butter or honey, laying them flat, end to end.
6. If desired, sprinkle raisins on
top.
7. Roll the tortillas and then cut them into smaller pieces (maybe 1.5-2 inches) while they're still
warm.
8. Insert toothpicks into tortilla
rolls to help them remain in closed position until cooled.
9. Place in a zippered styled
bag, inserting a damp food safe paper towel to help maintain moisture.
10. Refrigerate until ready to serve.
* Note: If desired, place tortillas
in microwave, covered with a damp towel and microwave for 10 seconds or until warm and pliable. Add toppings
to warm tortillas and prepare as above.
