Poha Breakfast Bars Source: Wendy AKA Toushoes, GFCFKids list Ingredients: 1 cup thin poha flakes, uncooked, briefly processed in blender 1 cup quinoa flakes 1 1/2 cups Bette Hagman flour blend 1 cup, packed currants, raisins, cranberries, chopped prunes, dates, or other dried fruit* 1 cup pear juice (or apple juice, or orange juice, or mixture of ¼ cup molasses plus ¾ cup water) 1/4 cup brown sugar 1/2 tsp cinnamon, more or less to taste 1/2 tsp salt 1/2 cup vegetable oil 1/4 cup sesame seeds (or hemp nuts or other small nut(s)) sweet rice flour (put aside in bowl) *soak dried fruit in small amt. of water if hard before adding to mixture. Instructions: 1.
Preheat
oven to 375°F. 2. Oil a 9” x 13”
pan, or two 8” square pans. 3. Combine all ingredients except
sweet rice flour in large bowl until moist enough to form a ball, without extra liquid. 4. Put mixture in prepared pan(s)
& spread evenly. 5. Bake for 30 minutes. 6. Remove from oven & cut
into squares while still hot. 7. When bars are cool, remove
from pan. 8. To prevent bars from sticking
together, roll them in sweet rice flour. |
