 Poha Waffles

Ingredients:

1/2 cup brown rice flour
1/2 cup poha OR quinoa flakes
1 Tbsp honey
1 tsp. baking soda
1/2 tsp. salt
3 Tbsp oil
1/2 cup milk substitute (i.e. Dari Free)
1 large egg
1 ripe banana (or 3/4 cup applesauce, pumpkin, grated vegetables, etc. 

1 tsp cider vinegar, optional

flaxseed, sunflower or sesame seeds, chopped dried fruit, or nuts, also optional

 

Instructions:

1.  Mix dry ingredients. 

2. Separate egg yolk from egg white & beat egg white to stiff peaks.  Set aside.

3. Mix egg yolk, honey, oil, milk, & wet fruit.

4. Add dry ingredients to this mixture & fold in egg white. For extra fluffy waffles, add 1 tsp. cider vinegar & mix gently.

5. Pour 1/3-1/2 cup mixture into waffle iron.

6. If desired, freeze extras in ziplock bags & reheat in toaster or microwave.
