Caramel Frosting

1 cup dairy free brown sugar, packed
1/ 2 cup gltuen free/casein free margarine
1/ 4 milk substitute
1 tsp vanilla
1 1/2 cups- 2 cups confectioner's sugar
 
Combine brown sugar, margarine and milk in a saucepan.  Bring mixture to a boil over medium heat, stirring regularly.  Cook for two minutes.  Remove fromheat, stir in vanilla.  Cook until lukewarm.  Gradually beat in confectioner's sugar until frosting reaches spreadable consistency. 
 
Yield: enough to cover 24 mini muffins
